What is HACCP?
HACCP stands for Hazard Analysis Critical Control Points. A business needs to perform a hazard analysis to determine if there are any hazards associated with the production of food and implement relevant control measures to ensure that the product is safe for human consumption.
What are food hazards?
Food hazards are unwanted materials that may be found in food products that can cause harm to the consumer. Hazards are usually categorised as Biological, Physical, Chemical and Allergenic.
Is it a must to have a CCP in the FSMS?
No. CCPs are determined using a documented methodology e.g. decision tree and the conclusion from the correct application of the decision methodology/ decision tree will determine whether a particular step in the manufacturing process is a CCP or not.
What is the difference between verification and validation?

Verification is confirmation, through the provision of objective evidence, that the specified requirements have been fulfilled. Verification is applied after an activity and provides information for confirmation of conformity.

Validation is obtaining evidence that a control measure (or combination of control measures) will be capable of effectively controlling the significant food safety hazard. It is performed at the time a control measure combination is designed, or whenever changes are made to the implemented control measures. Validation is applied prior to an activity and provides the capability to deliver intended results.

What is the difference between Local and Global GAP?

Good Agricultural Practices (GAP) are voluntary audits that verify that fruits and vegetables are produced, packed, handled, and stored as safely as possible to minimise risks of microbial food safety hazards.

GLOBAL GAP is a GFSI recognised standard for farming. Local GAP is a South African locally recognised standard for farming.

What is the difference between food safety and food quality?

Food safety is when the product being produced is safe for human consumption and free from any hazards that may harm the consumer.

Food quality is producing a product that includes all other attributes that influence a product’s value to the customer.

What is the difference between food defence and food fraud?

Food defence is when an intentional act of sabotage is done to food or production processes to cause harm to consumers or companies.

Food fraud is when an intentional act e.g. concealment, substitution, dilution, misrepresentation etc. is done to food products or ingredients for economical gain and may cause harm to consumers.
